In today's changing conditions, there has been an increase in the consumption of ready-made food with change eating habits. Moreover, parallel to production, additives used. The dose amounts are determined as a result experimental analyses. However, some show long-term toxic effects on human body genotoxicity tests. this review, definition substances, purposes usage, classification, genotoxicity, definitions tests and publications studies were discussed. search was conducted peer-reviewed journals using Science-Direct, Web Science Google Scholar. study, between 2015-2021 complied. For purpose, keywords ‘‘food additive’’, ‘‘genotoxicity’’ used together research articles included study.
